These are my go-to cookies when my kids want something fun, I want something easy, and no one has the patience for complicated steps.
They’re soft, chewy, loaded with all the good stuff, and forgiving enough to bake with little helpers (or while holding a baby).
I call them Monster Cookies for Little Monsters because they’re big, a little messy, and always disappear fast.
Ingredients
• ½ cup butter, softened
• ½ cup brown sugar
• ¼ cup white sugar
• ¾ cup creamy peanut butter
• 1 large egg
• 1 teaspoon vanilla extract
• ½ teaspoon baking soda
• 1 ¼ cups all-purpose flour
• ¼ teaspoon salt
• ½ cup quick oats
• ¾ cup M&Ms
• ½ cup chocolate chips
Swap note: You can use mini M&Ms for classroom treats or swap peanut butter for sunflower butter if needed.
Instructions(busy-mom friendly)
1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
2. In a large bowl, cream together butter, brown sugar, and white sugar.
3. Mix in peanut butter, egg, and vanilla until smooth.
4. Stir in baking soda, salt, and flour just until combined.
5. Fold in oats, M&Ms, and chocolate chips.
6. Scoop dough into large uniform balls and place 2–3 inches apart.
7. Bake for 10–12 minutes until edges are set and centers look soft.
8. Let cool slightly -or eat warm while standing at the counter (recommended).
Little Monster Tips
• These cookies spread - big cookies are part of the charm.
• Use a cookie scoop to keep sizes even (and hands clean).
• Let kids press extra M&Ms on top before baking for fun colors.
