Ingredients

Dry Ingredients

    •    1 cup white whole wheat flour (or all-purpose flour)

    •    ½ teaspoon baking powder

    •    ¼ teaspoon baking soda

    •    ¼ teaspoon cinnamon

    •    ¼ teaspoon salt


Wet Ingredients

    •    ½ cup unsweetened applesauce

    •    ¼ cup very ripe banana, mashed

    •    ½ cup finely shredded carrots

    •    ¼ cup melted butter or neutral oil (avocado or olive oil work great)

    •    1 large egg

    •    1 teaspoon vanilla extract


Instructions

1.    Preheat your oven to 350°F. Lightly grease or line a mini or standard muffin tin.

    2.    In a medium bowl, whisk together the dry ingredients -flour, baking powder, baking soda, cinnamon, and salt.

    3.    Add the applesauce, mashed banana, shredded carrots, melted butter (or oil), egg, and vanilla directly into the same bowl.

    4.    Gently stir until just combined. Do not overmix . Lumps are okay.

    5.    Spoon batter into muffin cups, filling about ¾ full.

    6.    Bake for:

    •    Mini muffins: 12–15 minutes

    •    Standard muffins: 18–22 minutes

Or until a toothpick inserted comes out clean.

    7.    Let cool slightly before serving (especially for little mouths).
